5 El Olive Oil
1/2 Cup Cashews
3 Garlic cloves
A handful of Cashews
Salt and Pepper
- Mix half of the spinach, a half cup of cashews, olive oil and garlic cloves to make a pesto. Flavor the pesto with salt and pepper. In the van i use my battery blender for this.
- In the meantime, cook the spaghetti.
- Roast a handful cashews in a pan. Add the remaining spinach to the Cashews and let it saute for a few minutes.
- Mix the pesto, the roasted cashews and the spinach under the noodles.
- Enjoy !
