Ingredients

  • 200g spinach

  • 5 El Olive Oil

  • 1/2 Cup Cashews

  • 3 Garlic cloves

  • 200g Spaghetti

  • A handful of Cashews

  • Salt and Pepper

Directions

  • Mix half of the spinach, a half cup of cashews, olive oil and garlic cloves to make a pesto. Flavor the pesto with salt and pepper. In the van i use my battery blender for this.
  • In the meantime, cook the spaghetti.
  • Roast a handful cashews in a pan. Add the remaining spinach to the Cashews and let it saute for a few minutes.
  • Mix the pesto, the roasted cashews and the spinach under the noodles.
  • Enjoy !
