Beetroot Soup with caramelized Onionrings

Ingredients

  • 2 onions

  • 3 small beetroots

  • 4 garlic gloves

  • 1/2 apple

  • 1/2 leek

  • 2 Tsp Nutmeg

  • 2 Tsp Cumin

  • 1 Glass redwine (vegan)

  • 2 Tsp yellow mustard

  • 800 Ml water

  • Oliveoil

  • Salt & Pepper

  • Karamelisierte Zwiebeln
  • 1 red Onion

  • 1 tbsp Agave syrup

  • Oliveoil & Salz

Directions

  • Cut the onions and beetroot into cubes. Then fry the vegetables in olive oil in a pot for 10 minutes.
  • Now halve the garlic cloves and cut the apple. Cut the leek into strips and add it to the pot.
  • Fry the vegetables for 10 minutes, then season with nutmeg and cumin and a pinch of salt. Let the vegetables sweat together with the spices for a few minutes.
  • Deglaze the vegetables with the red wine and let everything boil down briefly.
  • Add 400 ml of water and 2 tsp of mustard and cook the vegetables for 15 minutes.
  • In the meantime, cut the red onion into rings and fry them with plenty of oil for 5 minutes. Put the agave syrup on the onions and caramelize the onion rings with it.
  • Finally, mix the soup with the remaining water, season with salt and pepper and enjoy with the crispy onion rings.
