Beetroot Soup with caramelized Onions

2 onions
3 small beetroots
4 garlic gloves
1/2 apple
1/2 leek
2 Tsp Nutmeg
2 Tsp Cumin
1 Glass redwine (vegan)
2 Tsp yellow mustard
800 Ml water
Oliveoil
Salt & Pepper
- Karamelisierte Zwiebeln
1 red Onion
1 tbsp Agave syrup

Directions
- Cut the onions and beetroot into cubes. Then fry the vegetables in olive oil in a pot for 10 minutes.
- Now halve the garlic cloves and cut the apple. Cut the leek into strips and add it to the pot.
- Fry the vegetables for 10 minutes, then season with nutmeg and cumin and a pinch of salt. Let the vegetables sweat together with the spices for a few minutes.
- Deglaze the vegetables with the red wine and let everything boil down briefly.
- Add 400 ml of water and 2 tsp of mustard and cook the vegetables for 15 minutes.
- In the meantime, cut the red onion into rings and fry them with plenty of oil for 5 minutes. Put the agave syrup on the onions and caramelize the onion rings with it.
- Finally, mix the soup with the remaining water, season with salt and pepper and enjoy with the crispy onion rings.
