These vegan pancakes are sooo incredibly delicious and prepared in no time. They taste even better with the homemade warm apple filling. I used spelt flour and oat milk for the preparation. You can also use another flour and another plant based milk. The recipe is vegan, sugar-free and made for 5 medium pancakes.
Pancakes with Apple-Cinnamon-Filling

Ingredients
200 g spelt flour
200 ml plant based milk
100 ml water
2 tsp. baking powder
some coconut oil for frying
- Apple-Cinnamon-Filling
2 small apples
200 ml plant based milk
2 tsp. cinnamon
1 tsp. peanut butter
2 tbsp. unsweetened apple puree
Directions
- Cut the apples into small cubes and cook them in the vegetable milk and cinnamon for 20 minutes.
- In the meantime mix the flour with the baking powder and stir the vegetable milk and water into the flour.
- Put some coconut oil in a pan and fry the pancakes over medium heat. The pancakes are easy to flip when you see air bubbles on top and no liquid dough is visible anymore.
- Flavor the apple filling with the peanut butter and applesauce.
- Enjoy the pancakes with the homemade apple-cinnamon filling !
