As you have noticed I landed on Tenerife! Planned were 31 hours by ferry, from Huelva to this beautiful island. Finally, it was then 33 or 34 hours, honestly, I stopped counting at some point. Of course, on such a long journey the right food should not be missing. In the morning, before it went on the ship I have prepared me a few delicacies. Somehow you have to get the time around. - Cabbage Quinoa Salad with Balsamic Sesame Dressing
1 Cup Quinoa
1/2 red cabbage
4 leaves swiss chard
3 Tbsp. Balsamico
2 Tbsp. Sesam oil
1 Tsp Sesam
1 Tsp Agave syrup
Salt & Pepper
- Lentil fritters
1/2 cup lentils
1/2 onion
3 garlic cloves
6 Tbsp Olive oil
1 Tbsp tumeric, 1 Tbsp Nutmeg, Salt
2 Tbsp Sunflower seeds
4 Tbsp flour
3 Tbsp Oats
- Bircher Muesli
1 apple
1 pear
200 g oat yogurt
1 tbsp agave syrup
1 tsp peanut butter
2 tsp Chia seeds
2 Tbsp whole grain oats
- Banana bread
100g flour
2 tsp baking powder
4 ripe bananas
300 ml oat milk
2 Tbsp coconut oil
100g dark chocolate
Directions
- Cabbage Quinoa Salad with Balsamic Sesame Dressing
- Cook the quinoa briefly in twice the amount of water. Then let it steep for 15 minutes with the lid closed.
- In the meantime, cut the cabbage and chard into fine strips.
- Mix all the ingredients together for the dressing.
- Lentil fritters
- Cook the lentils for 20 minutes in double the amount of water together with a sliced half onion.
- Let the lentils cool and then add the garlic cloves, olive oil, sunflower seeds and spices.
- Mix all ingredients into one mass.
- Stir the flour and oatmeal into the lentil mixture.
- Form small balls and fry them !without OIL! in a pan until golden brown from alone sides out.
- Bircher muesli
- Cut the fruit into small cubes.
- Mix the oat yogurt with the fruit and the remaining ingredients.
- Banan bread
- Mix the banana together with the vegetable milk. Of course, you can also mash it with a fork.
- Mix the flour, baking powder and cinnamon into the banana milk.
- Add the coconut oil. Best when it is slightly warm and therefore liquid.
- Finely chop the dark chocolate and either fold it into the batter or add it on top of the batter at the end.
- Bake for half an hour in the silicone mold in the Omnia on medium heat.
