Green Power Quinoa aka. green spinach – sesame – quinoa with crunchy cashew – cabbage topping. 💚 This dish is once again created totally haphazardly, the taste has me at the end but really blown away. 💚 I simply sautéed the cabbage with coconut oil, salt and a dash of soy sauce, along with the cashews and some sesame seeds. It just tastes so crunchy to everyone! 💚 The quinoa is mixed with a spinach tahini coconut garlic ginger pesto that tastes a bit unusual and just super delicious. 💚

Ingredients
100g Quinoa
200ml water
- For the green pesto:
200g leaf spinach
1 tsp tahini
1 tbsp coconut oil
2 cm ginger
2 tbsp sesame
1 tbsp soy sauce
- Cabbage Topping:
200g cabbage leaf
2 Tbsp sesam
a handful of cashews
a little coconut oil
1 tsp soy sauce
Directions
- Boil the quinoa in the water for 10 minutes, then let it steep for 10 minutes with the lid closed.
- Finely mix all ingredients for the pesto with a little water.
- Cut the cabbage into small pieces and sauté in coconut oil with the soy sauce until hot and crispy. Add the cashews and sesame seeds and sauté briefly so that they get some color.
- Fold the pesto into the quinoa and enjoy with the crunchy cabbage-cashew-sesame topping.
