Beluga lentils with Thai vegetables

Ingredients
1 cup Beluga lentils
2 cups water
1 red bell pepper
1 green bell pepper
3 tbsp black sesame seeds
2 tbsp sesame oil
2 tbsp soy sauce
Juice of half a lemon
1 tbsp tahini
Directions
- Put the washed lentils in the saucepan with two cups of water.
Bring the Beluga lentils to a boil briefly, then turn the heat down to low.
Let the lentils simmer in the covered saucepan for about 25 minutes. - Cut both peppers into strips and put 2 tablespoons of sesame oil in a frying pan. Fry the peppers for 10 minutes until hot. Add 1 tbsp. of the soy sauce and the sesame seeds. Let everything cook together for another 5 minutes.
- Mix 1 tbsp tahini, 1 tbsp soy sauce and the juice of the lemon and fold the ingredients into the cooked lentils. Season with salt.
- Serve the lentils together with the roasted vegetables.
